Veggie Box #5


Well, we’ve sure been busy here on the farm and week 6 of the CSA is just around the corner. We’d prefer to update the blog on a weekly basis and I’m sure some of you have been wondering what some of those vegetables are, so from here on in expect to get weekly updates and we will try our hardest to include a recipe idea as well. 
I hope everyone has been enjoying their veggie box and not getting sick of eating kale on a weekly basis which gives me the perfect segue as what to do with your kale. 
Angus’ Simple Kale Salad 
I like my kale salad simple but you can add what ever you like i.e. tomatoes, cumber, sunflower or pumpkin seeds. 
  • Remove the stocks from your kale, if you’ve been eating the stocks you’ve probably noticed they have the texture of wood, they’ll turn you off kale so don’t eat them unless steamed. 
  • Shred the kale into pieces big or small, whatever you prefer and place in a salad bowl.
  • For dressing take 1 part olive oil and 1-2 parts lemon juice, you’ll have to gauge how much you need, It just depends on the size of the salad, I like a little less so that its not over powering. 
  • Pour dressing over salad and toss. 
Thats it! Super simple and refreshing.

-Turnips
-Kale (russian, flat leafed or curled leaf)
-Zucchini 
-Beets (golden or red) Steam your beet tops! 
-Beans (yellow and green)
-Green garlic 
-Carrots
-Snow peas 
-Swiss chard
